I was amazed at how the colour of the cure really went though the brisket and how much I loved the taste. I took it to some friends at the Plaza in Stockport to taste and they couldn't believe that I'd made it myself. Makes an great Rachel sandwich (a Reuben is made with corned beef) with sauerkraut and thousand island dressing or with salad, but the kit makes such generous portions I also made the end bits into a hash for breakfast.
