I'm a bit of a foodie, I've been making sausages for the past 5years after my daughter's bought me a meat grinder/sausage filler. I've made chorizo before but I've never quite got the flavour spot on even though I followed many recipes that is until now. I got the spice kit for Christmas and was on it 2 days later. I used a mix of shoulder and belly and did a fine grind . The results are absolutely amazing, just pan fried a small portion and they taste so authentic.
