Lamb Hotpot

Lamb Hotpot

What you'll need

  • 1 Medium Onion sliced into rings
  • 2 Medium Carrots chopped small
  • 750g of Diced Lamb (Neck/Shoulder Fillet)
  • 50g Flour
  • 1kg of Potatoes peeled and cut into slices
  • 2 Tablespoons of Oil
  • 500ml of Water
  • 2 Scoops of a Hacker Seasoning (see choices above)

Slow Cooker Method:

1. Coat the lamb in flour.  'Brown off' the meat in a pan with the oil.

4. Put a layer of lamb meat in the bottom of the slow cooker pan.  Then add a layer of onions followed by carrots and then a layer of potatoes.  Repeat the layering until you've used all the ingredients but make sure you finish with slices of potato. 

5. Mix 2 scoops of Hacker Seasoning with 500ml of water and pour over the top.

6. Cook on slow for 8 - 10 hours or on high for 4 - 6 hours. 

 

Oven Method:

1. Preheat the oven to 180C/350F

2. Coat the lamb in flour.  'Brown off' the meat in a pan with the oil.

4. Put a layer of lamb meat in the bottom of a large casserole dish or deep roasting tin.  Then add a layer of onions followed by carrots and then a layer of potatoes.  Repeat the layering until you've used all the ingredients but make sure you finish with slices of potato. 

5. Mix 2 scoops of your Hacker Seasoning with 500ml of water and pour over the top.

6. Cover with foil and cook for 4 hours.  Remove from the oven and take the foil off.  Turn your oven up to 200C and brush the potatoes with some melted butter.  Put the hotpot back in the oven for 30 min to brown the potatoes.

 

Hints & Tips

    1. Serve with Pickled Red Cabbage or Beetroot

    2. For a leaner cut of meat, use diced leg steak
