What you'll need
- 4 Chicken Breasts (cut in half) or Thighs
- 2 tablespoons Olive Oil
- 1 Medium Onion chopped coarsely
- 1 Small Red Pepper
- 1 Small Yellow Pepper
- 200g Button Mushrooms, halved
- 200g Pitted Black Olives
- 150ml Red Wine
- 2 tins (400g) Chopped Tomatoes
- 1 Scoop of a Hacker Seasoning (see above for choices)
Hob Method
1. Heat the Olive Oil, on high, in a grill pan and sear the Chicken on both sides until lightly brown. Then place to one side.
2. In the same pan, fry the Onion, Peppers and Mushrooms gently for 2 mins.
3. Pour in the Red Wine and bring to the boil.
4. Now reduce the to low and simmer for about 5 minutes.
5. Add the Tinned Tomatoes and Hacker Seasoning and mix well.
6. Add the seared Chicken, cover with a lid and simmer for 20 minutes.
7. Then add the olives and simmer for a further 5 mins. Serve.
Oven Method
1. Preheat the oven to 180C /350F.
2. Heat the Olive Oil, on high, in a grill pan and sear the Chicken on both sides until lightly brown. Then place to one side.
3. In the same pan, fry the Onion, Peppers and Mushrooms gently for 2 mins.
4. Pour in the Red Wine and bring to the boil.
5. Now reduce the to low and simmer for about 5 minutes.
6. Add the Tinned Tomatoes and Hacker Seasoning and mix well.
7. Place the seared chicken pieces into an ovenproof dish and pour the mixture over the chicken.
8. Cover with a lid or foil and place in the oven for 30 mins.
9. Remove from the oven and the olives. Place back in the oven for 5 mins.
10. If your sauce doesn't look thick enough, remove the lid/foil and place back in the oven for another 5 mins to thicken.
